Fish Sarciado

My late mom was a very good cook and one of the fondest memories I have of her cooking was this fish sarciado that she always cook for us when we were kids. I love the way she cooked this and through the years, every time we have this on our table, I always remember her and her cooking.

If you love fish and you are looking for ways to cook it why not try this one. It's so simple and easy to make and the ingredients are easy to avail and it taste so delicious.

salt and pepper
cooking oil
1 medium onion, chopped
4 garlic cloves, crushed
4 medium tomatoes, diced
3 eggs, beaten
ginger (sliced thinly)
red bell pepper (optional)
1 cup water

Directions:

1. Sprinkle salt and pepper on both sides of the fish.
2. Pan-fry fish on both sides with oil, about 2 minutes on each side until slightly cooked. Set aside.
3. Saute onion and garlic with 1 tbs olive oil in another saucepan. Add diced tomatoes and season with salt and pepper to taste. Cook until mixture turns saucy.
4. Add the fish and simmer for 10 minutes. Add the beaten egg and mix into the sauce until well blended. Serve with rice.

Baked Salmon

I love eating fish. In fact I can eat fish anyway you cook it. I love fish more than meat. Salmon is so good and I love it baked. Here's a recipe that I got from my good friend Sofia. The first time my hubby and I ate this was when Sofia invited us for supper in their house when they were still residing in our city. I have cooked this recipe many times and hubby and I really love it. I won't get tired having this on my table every now and then. The only problem is that salmon is getting expensive but it's worth it though with all the omega 3 that we can get from it. Anyhow, here's the recipe of the baked salmon. This is really delicious.

Ingredients
1 lb salmon fillet
1 cup sour cream
1 cup crab legs imitation, shredded
1/2 tsp lemon juice
salt
black pepper

Directions
Preheat oven to 350 degrees.
Place the salmon in a baking dish.
Sprinkle salt and black pepper to the salmon.
Mix together the sour cream, shredded crab leg imitation, lemon juice and a dash of salt.
Cover the salmon with the mixture and bake for 30 minutes.

Sinigang na Ulo Ng Tanguigue

I love eating sinigang but I was not good in cooking it. I remember my grandmother used to cook sinigang when were kids and I just love the way she cooked it. At that time, I didn't bother to ask her or observe her while she was cooking. All I was interested that time was to eat what she cooked. My grandma had already passed away many years ago and I didn't get her sinigang recipe so I can't cook sinigang the way she cooked it before. Her sinigang was not that sour unlike those in the restaurant that all you can taste is the sour tamarind powder that they added. It really turned me off. Until 2 years ago, my sister taught me how to cook sinigang the way our grandma used to cook. I was so glad to learn it and now I can cook good sinigang as my grandma did. I love to buy the head of the tanguigue fish because the soup really taste good and it's really perfect for sinigang.

Ingredients :

1 kilo fish head of tanguigue, split open and gills removed
1 large onion, peeled and finely sliced
2-3 tomatoes, diced
5 pcs of medium size kamias
a bunch of camote tops or chayote tops or kangkong tops
1 small piece of ginger, crushed
salt or patis

Cooking procedure:

Put the sliced fish head in the pot over low fire with salt or patis, sliced onion and crushed ginger. Simmer it for about 5 to 7 minutes stirring once in a while. Add 5 cups of water and bring to a boil then season with salt or patis. Add the tomatoes or camias and cook for another 10 minutes. Add the camote tops or chayote or kangkong tops. Simmer for 3 minutes. Serve at once.

Fish Burgers

I do love fish very much. My hubby does too but he only like fish if it's deboned and fried. That's the reason he loves eating fish burgers because it's yummy and tasty and it's already deboned. These savory salmon burgers hold up well on the grill, especially if you use a nice fillet of wild king salmon. Serve on an onion roll with lettuce, tomato, mustard, and horseradish for a great barbecue main dish.

INGREDIENTS:

* 2 1/2 pounds king salmon fillet, skinned and de-boned
* 1 cup dry bread crumbs
* 1/2 cup minced red onion
* 1 tablespoon Dijon mustard
* 2 teaspoons prepared horseradish
* 2 eggs, lightly beaten
* 1 tablespoon minced fresh rosemary
* 1/2 teaspoon salt
* 1/2 teaspoon freshly ground black pepper
* 2 tablespoons olive oil

DIRECTIONS:

1. Prepare the salmon by cutting into strips, cutting the strips crosswise, and chopping the fish until well minced. Be sure to remove any remaining bones.
2. In a large bowl, mix the minced salmon with bread crumbs, red onion, Dijon mustard, horseradish, and eggs. Season with rosemary, salt, and pepper. Chill at least 30 minutes in the refrigerator.
3. Preheat an outdoor grill for medium-high heat.
4. Form the salmon mixture into 8 burger patties. Lightly coat each patty with olive oil.
5. Place salmon patties on the grill, and cook 4 or 5 minutes on each side.

Fish Escabeche

I cooked the crappy fish yesterday and I made fish escabeche. My hubby love it. He doesn't like my fish paksiw so I cook it the other way. I still have a lot of crappy fish left and I will cook it again some other time. It took me a while to clean the fish. Imagine I cleaned 5 crappy fish yesterday. There are still 5 left uncleaned in the freezer. So here's the instructions to make Escabeche.

Clean the fish and sprinkle sea salt and a little pepper inside and out, coat with flour, then deep fry the fish until golden brown then set aside.

Sauce:
1 cup water
1/2 cup pineapple juice
1 pc tomato
1 tbsp soy sauce
1 tsp. corn starch dissolved in 1/4 cup water to thicken the sauce.

Other Ingredients:
1 medium onion sliced
1/2 pc. red sweet bell pepper, sliced
1/2 pc yellow bell pepper, sliced
1/2 pc green bell pepper
About a tablespoon of finely shredded fresh garlic

1. Bring the water to a simmer. Add the pineapple juice, vinegar salt, pepper. Let it simmer for a couple of minutes to cook the vinegar. Add the cornstarch and stir until the sauce thickens.

2. Add the rest of the ingredients and simmer for another minute.

3. Lastly, add the fish and cook for another minute.

Broiled Fish

When the weather's not right for grilling, try broiling instead. Broiling is great when you want a fast, simple, hassle-free preparation with delicious results. It gives fish a nicely browned exterior with the convenience of a temperature-controlled heat source. For easy cleanup, line the broiler pan with a piece of foil.

Here's good a recipe of a broiled fish.

INGREDIENTS

* 1/2 cup grated Parmesan cheese
* 1/4 cup butter, softened
* 3 tablespoons mayonnaise
* 2 tablespoons lemon juice
* 3 tablespoons chopped green onions
* 1/4 teaspoon salt
* 1 dash hot pepper sauce
* 2 pounds skinless halibut fillets

DIRECTIONS

1. Preheat the oven broiler. Grease a baking dish.
2. In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
3. Arrange the halibut fillets in the prepared baking dish.
4. Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.
